community activist, and culinary artist. If you ever stepped foot into my restaurant, The Quarters, then you already know! It wasn't just a place to grab a bite to eat; it was a WHOLE VIBE, it was nothing less than an EXPERIENCE. I spent years building a trendsetting space in the Pacific Northwest where live music, homemade beignets, jammin' bands, and soulful weekend brunches filled the room. For me, cooking has never just been about sustenance. It’s a passion I caught as a kid, acting as a little sous chef at my maternal grandmother's apron strings, watching her cook for the family. I can remember each of my aunts and uncles turning the handle on the ice-cream maker, adding rock salt to the ice, and pacing the floor with anticipation for it to be ready! My style is a true, authentic fusion of Southern-Soulful cookin’ and Midwest cuisine—food that makes you pat your feet, dance in your seat, and lick yo’ fingers.
As we all know so well, life has a way of knocking us on our ass! In a devastating period of less than two years (July 2019-May 2021), the world as I knew it completely shattered. I endured the unfathomable loss of my beautiful wife and business partner, Jade, my momma and my maternal grandmother. The well-structured pyramid who gave me my foundation: gone. On top of that heartbreak, I was separated from my kids, and I was forced to close the brick-and-mortar business I poured my soul into. I am no stranger to the fire; as a terminal cancer survivor for over 40 years now,
I've always seen life through a different lens and from a wider perspective. At my lowest and darkest place in my life, cooking is what got me through. It became my sanctuary, my lifeline, and the way I kept my creative juices flowing and alive. Instead of surrendering, I chose to lean into grit, grace, and the absolute power of servitude, passion, and love. I stood back up, listened to the wisdom of my ancestors, and let the fire transform me, and from the ashes I’ve risen like a Phoenix!
Seven years later, here we are, and the evolution has begun, and the time has arrived for my newest venture: “The Quarters In Da-Cut.” I have stepped away from the commercial bustle of the restaurant industry and opened the doors to my actual home. I am inviting you straight into my private residence for a soulful, reservation-only, referral-based private dining experience. This isn’t a regular dinner; it's an intimate space where food, conversation, and presence meet. I craft curated 5- and 7-course menus with rich, intentional ingredients designed to consciously optimize and nourish your mind, body, and spirit.
The Mind: Giving yourself the psychological room to step completely out of the victim role, set healthy boundaries without a shred of guilt, and cultivate raw mental clarity.
The Body: Slowing down to nourish yourself, sustain your physical energy, and grant yourself well-deserved rest and reset.
The Soul: Opening up to soul-stirring, honest conversations, leaning into raw vulnerability, and extending unconditional grace to yourself and others as you heal.
There is absolutely no rush here, only thoughtful pacing, intentional hospitality, and plenty of space to linger. At my table, the shrimp might start at the bottom, but it comes out as a delicacy; we find balance and we know exactly when to "let it rest a bit." I am offering a safe space where culinary excellence meets deep, transparent vulnerability. Whether you come for the bold flavors, the deep conversation, or the feeling of being completely restored, every single part of this experience is served with love, purpose, and a spirit of true devotion to others. While I am blessed to share my personal testimony of surviving terminal cancer, the wellness concepts offered at my table are for personal, spiritual, and emotional enrichment, and are not a substitute for professional medical advice, diagnosis, or treatment.
